A Healthy Soup
The season is changing! We can feel the chill in the air. This is the time to pamper ourselves with delicious and nutritious soups on chilly evenings! Made a delicious soup and complimented it with mashed potato! A perfect healthy dinner!
Ingredients-
* 1/2 Beet Root.
* 2 Carrots.
* 2 Tomatoes.
* 100 gms Purple Cabbage.
* Chopped Garlic.
* Basil.
* Cooking Oil.
Method-
* Wash all the veggies and boil purple cabbage, carrots, tomatoes, beet root for 15 minutes on medium flame. Do not put too much water.
* Add a pinch of salt while boiling.
* After the veggies are pressure boiled, purée them with hand blender. Add water if puree is too thick.
* Take 1 tsp oil in a pan and add basil leaves and chopped garlic in it.
* Sauté the garlic till light brown on low flame.
* Add garlic and basil leaves mix to the purée.
* Add additional salt if required.
* Add chilli flakes or black pepper powder according to your taste.
I like to keep my soup simple in terms of spices. I complimented the soup with garlic mashed potatoes!
