Soybean Biryani

I was checking my phone for messages when I came across a photograph of Biryani! I so much wanted to eat it from the photograph! Well, couldn’t do that, so made my version of Soybean Biryani!

Ingredients-
* 2 cups Basmati Rice (Long grained rice).
* Soybean nuggets.
* Paneer – 100 gms (cubes)
* Onions – 2 medium size, thinly sliced.
* 2 Tomatoes sliced.
* 50 gms Cashew nuts.
* Red Chilli powder.
* Turmeric powder.
* Garam Masala.
* Salt according to taste.
* Chaat masala.
* Garlic & Ginger paste.

Method-
* Wash and soak the basmati rice for 15 minutes and then boil it on low flame (covered with a lid) with 1 tsp of salt in it.
* Switch off the flame when the water has completely evaporated.
* Wash and boil the Soybean nuggets in a separate pan with a pinch of salt in it for 5-7 minutes on low flame. Do not cover the lid.
* In another pan, add the sliced onions, tomatoes, ginger-garlic paste, cashew nuts, 1/4 tsp of red chilli powder, pinch of turmeric, 1 tsp of salt and 1 tsp of salted butter. Pour enough water to soak them and put it on low flame for 15 minutes.
* After 15 minutes purée the mixture.
* Now add the boiled soybean and garam masala to the purée. Let it cook for 5-7 minutes on low flame!
* Check for salt and spiciness in the gravy. Add more chilli if you like it spicy!
* A few drops of lime will add a good tangy flavour!
* Sauté the veggies of your choice like cauliflower, potatoes, green peas, carrots to add in purée! I have used only soybean nuggets and onions!
* In a serving bowl, add a layer of rice, then a layer of soybean gravy, then rice again. Add such layers till rice and gravy are over.
* Garnish with mint or coriander leaves!
* Best served hot with Raita or plain curd!
